Blanching is a great way to preserve all of your vegetables to be used at a later time. They are great for stir frys, and the Crockpot.
Storing vegetables is not an easy task. It can take a few hours, but the end result is very yummy and very worth the time. Produce that has been partially cooked is easier to freeze than those that have not been.
It is easy to scoop a bunch of vegetables into a couple of little baggies and into the freezer they go. When I did my vegetables, I found it best to do it all at once and mix my produce as I went.
For example I had several containers that consisted of carrots, celery, and green peppers ready for a stir fry or lasagna, while some had tomatoes and onions ready for a salsa blend.
If I had planned to get some of them prepped it was so nice to just grab a bag of frozen produce and put it into the meals I made.
