Broccoli NutritionBroccoli is a POWERFUL disease fighter. High in Vitamin C and fiber, you should also eat this when you are ill or pregnant. The high fiber content would help to solidify any diarrhea, and the folate will help with meeting babies needs during development. Fresh is best, and if the florets have yellow tops they have lost a significant amount of their nutrients. When choosing a bundle, choose one that has no yellow present and is solid green.
Any signs of blackening or mold would mean it has been contaminated and you can cut off that piece, but why buy it in the first place? Word of Caution: When cooking be sure not overcook this vegetable. Doing that will cause it to release yucky smells and cause you to have gas.
My Favorite Broccoli Soup RecipeWhen we used to go to Winnipeg for the weekend as kids, my dad used to pick us up from the bus stop after school and hurry us home to feed us dinner before getting my mom from work. Every time we went we always had the same meal. Broccoli Soup. His Broccoli Soup Recipe was a can (or two seeing as there where 6 of us!) and a head of Broccoli. He wouldn't steam or anything to the veggie before putting it in. And it calmed us and filled our tummies each and every time! What an amazing meal!
