This chicken stir fry is so easy to make and deliciously healthy, everyone will want to eat it!
From cutting the vegetables to on the plate this whole meal takes about 40 minutes to make. All you do is start cooking the meat and then the vegetables.
This is what you will need:
2 diced Chicken Breasts
Eggplant
Carrots
10 Chopped Mushrooms
1/2 head of diced Cauliflower
10 oz. of Snow Peas
6 Asparagus Stalks
10 oz. of Bean Sprouts
2 tablespoons of Olive Oil
Coarse Black Pepper
2 lemons
The "How to Make it!"
Begin by adding the meat to one tablespoon of olive oil. And depending on how long it takes to cook your rice, start this now as well.
Cook meat thoroughly over medium - high heat and sprinkle with Coarse black pepper. When chicken is done, place into a new pot with 1 tablespoon of olive oil on the bottom and begin adding vegetables.
First the eggplant, then diced carrots. The Mushrooms, Cauliflower, Snow Peas, Asparagus, and Bean Sprouts all follow.
At this time, grate the skin off of the lemons and add to vegetables.
Make sure you are continuously stirring. Add one cup of water to assist with cooking the vegetables and cover.
Wait about 5 minutes and mix again, this time adding the juice of two lemons as well. After just two more minutes, separate the rice onto plates for your meal, and add your Stir fry either on top or on the side.
