Ginger Chicken Stir Fry: A Ginger Chicken Stirfry for Everyone!This Ginger Chicken Stirfry is a delicious addition to anyones recipe book! Bursting with flavor and satisfying both the sweet and spicy buds we've got, this one is sure to please the whole family!!
This is what you'll need...2 full round chicken breasts (chopped, boneless and skinless)1 tablespoon minced ginger root 2 tablespoons Olive Oil 1 tablespoon fresh Cilantro 1 1/2 c chopped Carrots Last nights left over potatoes =) 2 slices of processed cheese 1 c mild Salsa 2 c rice How you'll make it...Heat two tablespoons of olive oil. Then add chicken.
Next before chicken is fully cooked add cilantro. After cilantro has been added continue cooking for another 2 minutes. Add carrots and then potatoes. (You will want to start your rice any time now depending on cooking time). Stir and cook until both carrots and potatoes are cooked. Or reheated since we are using last nights potatoes remember ;) Next add your one cup of salsa. DO NOT STIR AND DO NOT COVER!
Wait 2 1/2 minutes then add the ripped pieces of the processed sliced cheese. Now remove from heated element and continue stirring to mix all the salsa, and cheese topping. Place on rice or beside it on a plate. THAT'S IT!! This whole dinner takes about 20 - 25 minutes total to make and the outcome is so delicious your family will want Ginger Chicken Stirfry every night!!
