Momma Celeste's Eggplant Lasagna Recipe!This Lasagna Recipe is 100% nutritious for you. There are no additives nor preservatives. All you need is a blender, an oven and of course something to cook it in. For this recipe to be able to be 100% nutritious, I have removed the noodles and used Eggplant in place of. I know you are probably thinking how gross eggplant is going to taste in your dinner. However, the eggplant is actually bland, therefore otherwise can go unnoticed in the lasagna! This is What You Will Need to Make this Eggplant Lasagna8 - 10 Med. Tomatoes 6 Stalks of Asparagus 15 Chopped Mushrooms 1 Eggplant 2 c Green Peppers 2 lbs of Hamburger Mix of both Cheddar and Mozzarella Cheese Dill Parsley Cilantro Garlic Begin boiling water for Tomatoes. Pre-heat oven to 350 Celsius. When water is at a rolling boil, add tomatoes. (This may take one or two attempts, however continue using the same water. Do not drain it with each new batch of Tomatoes.) After all of the tomatoes have been boiled, cool under cold water in the sink and peel skin off. Blend in the blender and place into large pot on medium high heat for continued cooking. Remove garlic from oven and peel off outer layers. Leave oven heat on 350 Celsius. Place all hamburger onto a cookie sheet (or other cooking utensil) and begin cooking. It is important that the tomatoes boil, as this will become your tomato paste. They are a water based vegetable (or fruit) so the tomatoes must boil to assist with the evaporation of additional water. Once the tomatoes have begun to boil, add your newly peeled garlic. The peppers, and all spices go into the pot at this time as well. After 20 minutes of stirring, add the cooked hamburger. **It is essential that the hamburger be fully browned for best eating and nutritional values. Do not burn the hamburger.** Cover the eggplant with more tomato paste until there is only a little room left at the top of the pan. Sprinkle the mixed cheeses over top so that there is no mixture showing. Bake for an additional 15 minutes at 350 Celsius. That's it! Your done, and enjoy. This Lasagna Recipe is delicious and edible for the whole family.
