Onions: Growing Onions and how to use them!

Onions do more then make your eyes water..

Onions may not be the best thing to cut, slice and dice, but their anti-cancer properties should make them high on your list of foods to eat.

Due to the high amount of sulfur compounds contained within the veggie, when they are cut there is a chemical reaction in the air which is what causes the eyes to respond by watering. (I've heard that wearing glasses can typically lower the amount that gets into your eyes, but seeing as I wear glasses, I still get all teary eyed when cutting onions!)

This also makes them fantastic for helping to clear a stuffy nose. Which is also why they are such a great addition to any soup! However seeing as they are high in both Vitamin C and Beta Carotene, the greens tops of spring onions are best for salads etc. There are literally hundreds of different types of this vegetable.

So how do you choose? Small and short ones, or big thick fats ones? Purple? White Onions?

Well for cooking my soups, I prefer to use the large white ones. This makes it easier to slice and dice them and drop them into the large bowl.

For regular day to day use, I prefer chives into the salads or into a stir fry. On occasion I will use cooking onions for the stir fry's but it is easier to use chives!

The best and healthiest Onion soup ideas?

When making a soup boil the water and the bones of the meat first (if you are using chicken for example). Then when done boiling allow to fully cool and the fats will rise to the top and solidify.

Skim the tops, remove the bones and start boiling again with this veggie, celery, carrots and any other Spices, meats or extras!

** A special note: Do not store them near potatoes. The gases that potatoes release cause this vegetable to mold faster!

When it comes to Growing onions, we always grew the long green chives. They never Onions Picturemade it far because they were always eaten raw or in a salad. To grown chives, just make a little hole in your garden, add a few seeds, cover and water.

If you plan on starting a green house, ensure that your produce is in a warm area. This will help when it comes closer to transplanting your onions!
